Bacon And Zucchini Pasta Recipe

This recipe for bacon and zucchini pasta is easy to prepare and is the perfect combination of sweet and salty.

Ingredients

1 pound penne

2 tablespoons butter
1/2 cup chopped onions
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh rosemary
1/2 cup white wine
4 big tomatoes, diced
1/2 cup cream
salt and pepper, to taste

1 zucchini sliced
250g bacon sliced

Directions

Sauce

In a sauce pan melt the butter, add in onions, cook till they become transparent. Add in basil, rosemary, and wine. Bring to a boil, reduce heat and cover for 15 minutes.

Add in tomatoes, cream, salt and pepper, bring to boil. Reduce heat down to a simmer and cook till it starts to thicken. Set aside to cool.

Once cool put in a blender or food processor and puree. Return to heat.

While making sauce, cook bacon in a separate pan until crispy.

Once bacon is cooked, drain off excess fat, and add zucchini.

Cook zucchini, should take about 5 minutes.

Cook pasta until al dente. Drain and add pasta to sauce. Stir to coat. Place in bowls, add cooked bacon and zucchini, and serve.

Garnish with fresh basil.
