Buttermilk Banana Muffins Recipe

Try this moist Buttermilk Banana Muffin recipe. Great with that morning coffee.

Ingredients

Muffins
2 1/2 cups all purpose flour
2/3 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon cinnamon
1 cup buttermilk
1/4 cup vegetable oil
1 egg
2 ripe bananas
Drizzle
1 tablespoon melted butter
1 tablespoon brown sugar
1/4 teaspoon cinnamon

Directions

Preheat oven to 375˚F.

Line a 12 cup muffin pan with paper liners.

In a large bowl combine the flour, brown sugar, baking powder, baking soda, salt and cinnamon.

Put the wet ingredients, including the banana cut into chunks, into a blender and blend until nice and smooth.

Pour in the wet ingredients and stir and fold together.

Divide the batter evenly into the muffin cups.

Spoon about 1/2 teaspoon of the drizzle over each muffin.

Bake 25 minutes or until done. Test with a toothpick. Insert in the center of the muffin and if it comes out clean they are baked.
